
Now that the holidays (and a family stomach bug) are finally behind us, we have settled back in to a normal routine. This week I made some really yummy bean enchiladas. I added some red peppers into the beans, and they were a great addition!
Last night I made some mini mozzarella, tomato and basil sandwiches, a favorite of Adrian and mine. I made a quick side salad with Romaine (and arugula in mine) and some homemade garlic croutons. The fresh mozzarella was especially delish – a rare treat that happened to be on sale last week.
I’m looking forward to Friday night pizza this week – I’m trying a new one. Roasted potatoes and ricotta cheese – YUMMY!!!
